Spaghetti Squash and Meatballs in under 20 minutes!

Spaghetti squash makes for a great (semi) guilt free comfort food dinner. I make mine with a cream sauce which increases both the comfort and the calorie count. We eat this meal often enough that I have it down to 20 minutes from turning the stovetop on to food on the table. Hooray!




Time Saving Tips:
1. This week I bought a huge squash and stuck it in the oven Sunday night so that it would be ready to go on whichever weeknight we decided to chow down. I still have half of it in the fridge that I can use for supper another night. Maybe it will be side dish with some butter and herbs.

2. Freezer meatballs can be microwaved in 2-3 minutes. I buy pre-made freezer meatballs. I tried making my own but they never turn out nearly as tasty or juicy. I'll have to put meatballs on my list of things to learn about. Either way, once I learned that not only could I buy pre-made meatballs but that they were microwavable, I went from 20 - 30 minutes of waiting for meatballs to be finished to meatballs ready exactly when the sauce is done! Excellent Trick.
